Last Sunday evening, we received word that Ryan’s old college mate would be joining for dinner to gift us with a new ceramic piece he’d just finished. Elated but crunched for time and our produce lacking any new inventory, we had to get creative and muster up a small dinner quickly. Ryan bustled down to Cookbook to procure some of his favorite dinner staples, while I created a salad.
Two plums had just ripened enough to be picked from our tree and I had one overly ripe apricot left. I thought these ingredients to be the perfect elements to create a raw fruit vinaigrette dressing.
Raw Fruit Vinaigrette ¼ cup olive oil 1 tbls apple cider vinegar 2 plums pitted 1 apricot pitted salt and pepper to taste
For a chunkier texture chop into small pieces and whisk all ingredients together by hand. Or for a smooth texture place all ingredients in a food processer until pureed.
Easy and decadent, it was perfect over a chopped garlic, scallion, avocado, herb and mixed greens salad.
