Acai Ice Cream Recipe | Christine Della Cioppa

Once again, the incredibly talented Christine Della Cioppa is here to share her amazing healing, energizing, and beautifying Acai Ice Cream recipe with the F+N family. A true life-changer this one is and the perfect way to celebrate this amazing LA summer weather. 

The Acai Ice Cream is a variation on something we used to make at The Erewhon Tonic Bar. We all sort of adapted our own version of it, and mine incorporates other berries as well just to get as many antioxidants in there as I can. I love adding Goji berries which are high in beta carotein, and can lift the mood and brighten the eyes. Camu berry which has the highest vitamin C content of any food! Sometimes I'll add in some fresh blueberries as well. Tocotreinals which are made form rice bran solubles and have a lot of vitamin E are a great addition to any superfood recipe since they help to create a fluffy somewhat creamy texture and add an amazing flavor. If you would prefer to make the recipe vegan you can use a vegan protein powder instead of the Grass-fed whey protein although the whey really adds something to the texture that is quite prefect.

Antioxidants are super important in terms of fighting free radical damage to ward off both premature aging and cancer, and we really don’t get enough of them in the average diet. The only thing I would suggest is that any cold foods, such as ice creams, be consumed when the weather is hot. As a general rule of thumb, try to eat more warming/ cooked foods in the cold and rainy months and try to save your cold/raw  foods when your body needs to be cooled down in the warmer dryer climates.

ROYAL ACAI ICE CREAM | you’ll need a vitamix with the plunger to make this!

4 bricks of frozen raw Acai | you can find these in the frozen isle at wholefoods; just make sure you get one that is unsweetened.

3 Tablespoons of Tocotreinals | this is rice bran solubles and is an amazing source of vitamin E

1 heaping Tablespoon of Grass Fed Whey | I really like the One World Whey brand but there are others that are good as well. As long as its grass fed!

1 heaping Tablespoon of nut butter | I prefer Walnut but you could also use Cashew or Almond.

1 Teaspoon of Camu Powder | I like the Whole World Botanicals brand

2 ounces of Goji berries | I love the Dragon herbs brand

2 ounces of Organic blueberries (optional)

1 tablespoon of  Organic and shelled Hemp seeds.

a splash of rice or almond or rice milk just to help the vitamix move things along. The Acai bricks should be right out of the freezer and it can take a bit of elbow grease to plunge them into an ice cream.

a few drops of vanilla stevia (use very little the taste can be overwhelming) you can always add more if you need to after you taste it. You can also use Xylitol if you prefer that.

PROCESS | Use the plunger to push and mix until everything is mixed well and has a creamy texture.

TOPPINGS | a sprinkle of cacao nibs, bee pollen and goji berries! It is incredibly delicious!

note: Put the acai bricks in before adding in any powders or the powders won’t fully mix and will stick to the bottom. Same goes for the nut butter. Enjoy!
