My kitchen has become all things coconut as of late since the release of Meredith Baird's new uncookbook, The Coconut Kitchen.  This book compliments summer weather, glowing skin, and high vibrations from healing foods (for the raw food obsessed in all of our heart)!  Here is Meredith's divine coconut spin on the ancient Golden Milk recipe.

M | The inevitable aftermath of writing a cookbook is seeing all the things that you wish you had included. This, I know. When the creative options are endless what do you do? You try to create recipes that are excellent bases for people to get creative on their own! I get questions all of the time - can you add this or that... and the answer is of course! Cooking (or uncooking) should be synonymous with creating. 

This recipe for golden coconut milk is the perfect base for summer produce and smoothies. I can't get enough of white nectarines and peaches. I added one of each to the recipe below. 

The term “golden milk” has become synonymous with turmeric-enhanced milk. Golden milk is one of the most delicious smoothie and nut milk variations. The combination of coconut milk, honey, and fresh turmeric is a powerful cold and flu fighter, immunity booster, and mood enhancer. I’ve included the optional royal jelly version, which takes this recipe to the next level of nutrition. This recipe is great on its own or when served in a yogi tea blend.

GOLDEN COCONUT MILK 

Serves 2

2 cups coconut milk

1 tablespoon honey

1 tablespoon fresh turmeric juice, or 1 teaspoon dried turmeric

Pinch of cinnamon

Pinch of nutmeg

1 serving of Immortality Alchemy® Bee Mana (optional)

1-2 medium peaches, nectarines (or both!) 

PROCESS | blend all ingredients until smooth.

If you don't have Bee Mana of course it is optional, but it is a great way to boost the nutrition of this smoothie.  Royal jelly is a rich source of essential vitamins (including B12, B5, and folic acid), minerals, proteins, and amino acids. It can be used as a general health tonic for increasing energy and stamina and boosting immunity. My favorite is  Immortality Alchemy® Bee Mana- it is 100 percent raw, organic, dried royal jelly extracted from bees that are never fed sugar or artificial sweeteners.
