Gut Healing Tigernut Cookie Recipe • Cathryn Fowler

Has anyone else been eating their feelings after last week and that full moon? I certainly have; and it's been in the form of two chocolate chip cookies a day from Honey Hi. Thank you Universe for sending us Cathryn Fowler, whom invents the most original and inspiring superfood recipes!!! Here she is once again gifting us the perfect healing holiday cookie alternative. 

C | I’m not exactly one for proper measurements and consistencies of baked goods. I leave that to the far more talented culinary wizards in the kitchen. I tend to throw all the things I’m craving together, making sure to include some healing foods in there, and hope for the best. I say this as a disclaimer for the following cookie (and I use the term “cookie” loosely). It’s kind of a mushy consistency, and it’s kind of sticky, but that’s exactly how I like it, as it reminds me of my childhood favorite of Sticky Toffee Pudding. Bonus factors are the gelatin helps my digestive and skin health, as well as eases me into a gentle state of sleepiness, while the tigernut flour provides that wonderful prebiotic fiber, which helps my gut’s natural probiotics thrive.

It’s my current favorite bedtime treat, and I hope you enjoy! 

 Gut Healing Tigernut Cookie

Single Serving

Preheat Oven to 350 degrees

Mix:
1 TB grass fed gelatin
1 TB vanilla protein powder of choice
1/2 TB ground flaxseed
1/2 TB tigernut flour
1/2 TB coconut flour
a few shakes of pumpkin pie spice
a pinch of celtic sea salt
a little less than 1/4 tsp baking soda
1 TB apple sauce (homemade or unsweetened) 
about 1 TB water - enough to make sure everything gets properly mixed

PROCESS | Spoon mixture onto coconut oil coated baking sheet.
Pop into oven for approximately 15 minutes.
Allow it to cool for a bit before removing cookie (allowing time for it to firm up a bit too).

My personal favorite way to enjoy this is either: mushed up with raw goat milk poured on top, with a drizzle of molasses
or with coconut butter slathered on top with a drizzle of molasses.
